Characteristics of taste
Imagining the warm weather of spring, I aimed for a slightly lighter and refreshing flavor. Gohyakumangoku, a rice suitable for sake brewing from Kyoto, is a sake rice that is perfect for spring-like impressions. A slight bitterness and astringency remain in the aftertaste, like ingredients that herald the coming of spring, such as fukinotou and cod buds. The lingering aftertaste moves you forward to the next meal.
