Characteristics of taste
We carefully polished "Hidahomare" from Gifu Prefecture, a rice suitable for sake brewing, to a maximum of 60%, and brewed it with underground water from the Northern Alps. It has a sweet and gorgeous aroma of koji, and although the alcohol content is a little high at 17%, it is moderately spicy, and has a deep flavor with a good balance of rice flavor and acidity. Enjoy our new winter-limited sake.
