Characteristics of taste
Kijoshu is an alcoholic beverage that is brewed using some alcohol instead of water. Niida Honke's Kijo Sake We use a generous amount of Kijo Sake that was brewed the previous year. Preparing Kijoshu with Kijoshu is the same idea as Saishikomi soy sauce. Every time we brew it, we add to it, and by the time we reach our 400th anniversary, we believe it will be a unique sake that has been added to it for 100 years.
It has a silky smooth texture and a rich, syrupy taste.
