Junmai Ginjo sake made using 31 types of rice grown in Shiga Prefecture. It was created through crowdfunding with the desire to "convey the charms of Shiga." It continues to evolve year by year, with the hope that eventually it will be able to use all 40 types of rice grown in Shiga Prefecture.
