- Kyoto Fushimi [Shoutoku Sake Brewery], founded in 1645, is a Kimoto sake brewer that makes use of horse-cultivated rice. By keeping the rice polishing ratio at 75%, we aimed for a rustic, wild taste. The unprocessed sake is sterilized by pasteurization and bottled as is. It has a strong acidity and rich flavor, and has a rich finish that brings out the natural sweetness of the rice. By aging it for a long time, you can expect the flavor to deepen further. The 2021 vintage, both black and white, is placed in a natural wooden box transported by horse transport. Received the Recommended Sake Award in the Old Sake Category of the "International Wine Challenge 2023" Sake Division. Brewed in March 2021.
