Characteristics of taste
Made with 100% Yamada Nishiki, the best sake rice grown in our own fields. Polished to 40%, this Junmai Daiginjo sake is characterized by a gentle aroma and a fine balance of acidity. The sake was brewed in 2020 and aged in a bottle in a refrigerator at 2°C. It is even more mellow than when it was new. It can be enjoyed with a variety of pairings, such as seafood dishes and cheese carpaccio.
