Characteristics of taste
This is a Junmai Ginjo unprocessed sake brewed from 4% polished Yamada Nishiki rice grown by Mr. Izawa in Komachi Village at the foot of Mt. Ibaraki. Both the rice and the sake are sourced locally, and the sake is transferred to the tank during the peak of the winter brewing season and carefully bottled one by one. This is the driest of our products.
