- Characteristics of taste
- The Ise Shrine rice fields suffered serious damage in a typhoon in 1989, and the Koshihikari rice in the 8th West rice field was completely knocked down. Among them, only two stalks stood straight up toward the sky, and these were the new variety "Isehikari." As "God's rice," they were kept secret from the shrine. Today, this rice, which is highly regarded as edible rice, is cultivated by Mr. Kurata, a farmer in Hagi who is passionate about natural farming, and a pure rice sake made from 100% Isehikari rice without the use of chemical pesticides or fertilizers was born. It has a gentle mouthfeel and is not suitable for sake brewing, so the taste is rather flat, but the umami flavor derived from the rice can be felt at the base, and this umami flavor works in a centripetal manner to add depth and accent to the flavor.
