Characteristics of taste
We brew sake using Kame no O, one of Japan's three major varieties, grown in the place where it originated. We use 100% Kame no O rice, specially grown at Inoue Farm, which has been given over 70% less pesticides and chemical fertilizers. The rice is polished to 40%, but the sake is slightly dry to dry and aged in a cool warehouse, resulting in a mellow sake that pairs well with food.
This is a sake that can be enjoyed at a variety of temperatures: chilled, at room temperature, or warm.
