- Characteristics of taste
- Junmai Ginjo Genshu brewed in 2008. A slightly dry sake with a refreshing Ginjo aroma, savory flavor, and a crisp aftertaste has been aged. <Two-stage hybrid aging of low temperature aging and room temperature aging> From 2008, unpasteurized sake has been aged gently and gently in a refrigerator under temperature control for about 10 years. From 2019, pasteurized sake has been aged at room temperature.
