- "800 Soba" is the flagship of the "800" series, brewed with rice and buckwheat koji. It is brewed at Abe Sake Brewery in Kashiwazaki, Niigata, using rice from Niigata and organic buckwheat from Ichikarabatake in Ojiya, Niigata.
Buckwheat grains are made into yellow koji and crossed with ginjo rice to bring out a clear sweetness, and to bring out the rich flavor of the buckwheat, Abe Shuzo's kasutori shochu is used in the "bashira shochu brewing" process, which involves subtracting elements.
At room temperature, it has a refined taste, and when heated, it has a soft consistency and flavor similar to soba soup.
