“haccoba -Craft Sake Brewery-” is a sake brewery that opened in February 2021 in Odaka Ward, Minamisoma City, Fukushima Prefecture.

1. About “haccoba Namie Brewery”

▲Haccoba is a brewery that reuses logs from temporary housing where former Namie townspeople lived as an evacuation site.

In July 2023, haccoba's second base, "haccoba Namie Brewery", was established in Namie Town, Fukushima Prefecture.Namie Town is a town next to Minamisoma City's Odaka Ward, where the first base, Haccoba Odaka Brewery, is located, and is an area that was more severely affected by the nuclear accident.

By daring to operate a sake brewery that straddles two towns, we hope to create cultural solidarity that transcends administrative divisions such as local governments.

The brewery was built in cooperation with local design firm Fimstudio and construction company Tohoku Kogyo Kensetsu Co., Ltd., using recycled logs from temporary housing where former Namie residents lived as an evacuation site. ing.While inheriting the memories of the earthquake, we aim to create a warm scene where people can gather.

2. Opening up the frontier of sake by making sake that transcends boundaries

There was once a time in Japan when every household enjoyed making Doburoku, a type of sake made with a variety of ingredients.However, during the Meiji period, sake production became licensed, making it difficult to make sake freely.Sato and his colleagues believe that the free brewing of the past is the origin of fermentation culture, and by pursuing sake making that transcends genres, they are sharing the joy of making sake.

3. Celebration set of “Experimental brewed sake -namie-” and original glass

We are trying new flavors based on the Tohoku doburoku manufacturing method "Hanamoto", which is the root of haccoba's main product "Hanauta Hops".

In addition to using ``Karakagusa'' hops that grow naturally in Japan and Western aroma hops, they also incorporate lactic acid fermentation using lactic acid bacteria.Since it was a test brew in the middle of summer, the microorganisms were active, resulting in a bolder flavor with more body than regular Hanauta hops.

``I would be happy if you could enjoy the experience of the first strong steps we have taken in Namie Town,'' says Sato.

In addition, to commemorate the completion of the brewery, we will also be making original glasses.

With the cooperation of Kimura Glass Store, a special logo is included on the glasses of the Piccolo series.It's short and has a casual look, but it's not too rough and elegant, making it perfect for a little luxury in everyday life.
