At the Milan Sake Challenge 2024, an international sake competition held in Milan, Italy, our assemblage sake "Assemblage Club 3 CODE NAME: Taro'" developed and produced by our company and three Kyoto sake breweries (Masuda Tokubei Shoten, Kitagawa Honke, and Matsui Sake Brewery) won a silver award, alongside many other well-known sakes!
This miraculous blend of sakes from different breweries opens up a new chapter in the world of sake assemblage. The high evaluation it received following the Singapore Sake Challenge shows new possibilities for assemblage.
In recent years, Japanese sake has become increasingly popular in Milan, with more restaurants and bars serving it. The number of specialty shops and events is also on the rise, spreading the appeal of Japanese sake. In particular, there has been a lot of attention paid to pairing Japanese sake with Italian cuisine, leading to the discovery of new flavors. We are very pleased to have been recognized in such a market. We plan to use this opportunity to actively work on further exports and to hold Japanese sake events overseas.
Comments from the judges
It has a gin-like aroma and a deep, sake-like flavor. It is well-balanced and refreshing, making it the perfect companion to meals. It has a good balance of grain, dairy and fruit flavors. It pairs well with a variety of dishes, such as bison tomahawk steaks, pear-flavored rice and hunter-style cod-stuffed ravioli (fish base). Signature notes of this sake include chestnut, yellow apple, chocolate, fresh cheese and milk, creating a harmonious blend suitable for a variety of culinary experiences. What is the Sake Challenge?
This is a competition held annually by the Sake Sommelier Academy® (headquarters: London, UK) in countries around the world with the aim of spreading Japanese sake to the world and creating opportunities to enter new markets. It is an independent competition held without sponsors, and focuses on how well the submitted sake matches the market and tastes of the hosting country, with local sake sommelier qualifications judging the taste and quality. It has been held in London, Tokyo, Bordeaux, Luxembourg, Singapore, etc. so far, and this year's Milan Sake Challenge 2024 will be judged in three categories: a "sake tasting evaluation" by Italian sake sommeliers, a "food pairing evaluation" with Italian ingredients and dishes by chefs and special ingredient partners, and a "design evaluation" by famous designers.

What is assemblage? / Infinite flavors born from combinations
Assemblage refers to the traditional technique of blending raw wines, and is the mainstream method in France, Italy, Spain, and other countries. Bordeaux wine and Champagne have always been world representatives, thanks to the complex flavors and aromas that can only be created by combining different wines. It has also become clear that there are flavors in sake that can only be achieved through assemblage, such as layering flavors and rounding off edges. In addition to the fermentation techniques used by the master brewer, assemblage techniques can broaden the flavors of sake even further.
