Tanabe Sake Brewery, located in Eiheiji Town, Fukui Prefecture, is brewing sake to commemorate its 125th anniversary. They are challenging themselves to create "Ikki, the origin of sake brewing" using sake rice (Gohyakumangoku) that is grown without pesticides or chemical fertilizers.

In this milestone year, they will be taking on the challenge of "Ikki, the origin of sake brewing" using pesticide-free, chemical fertilizer-free sake rice (5 million koku). The plan is based on the Zen concept of "moto," referring to Eiheiji, the head temple of Zen, located in Eiheiji Town, where the sake rice was grown.
The birth of "Utatane"
"Utatane" was born from the desire to return to our roots and deliver a new type of sake.
The word "Utatane" has two meanings.
Uta (poem): Expresses the style of valuing conversations with drinkers and being there for them since the establishment. Tane (seed): Expresses the image of rice seeds sprouting, grown in the rich natural environment of Eiheiji Town.
Using specially cultivated rice and Tanabe Shuzo's own yeast, the sake brings out the flavor of the rice and retains a strong taste.
・Luxuriously prepared using the pure water of the Kuzuryu River
"Utatane" uses the pure water of the Kuzuryu River, the largest river in Fukui Prefecture. The Kuzuryu River, which is filled with meltwater from the peaks of mountains including Mt. Hakusan, one of Japan's three most famous mountains, has been rich in high-quality minerals over the years. The brewing water from the Kuzuryu River is the origin of Tanabe Sake Brewery's sake and is used in all processes.
・Made with specially cultivated "Gohyakumangoku" rice from Fukui Prefecture
The specially cultivated rice used this time is rice grown in accordance with the "Guidelines for Labeling Specially Grown Agricultural Products" established by the Ministry of Agriculture, Forestry and Fisheries. Specially cultivated rice is different from regular rice for eating and sake, in that it is grown without the use of medicines or chemical fertilizers, and is said to be very difficult to grow.
・An elegant taste made with our own yeast
The yeast used this time is Fukui Yeast FK501.
Using our own unique yeast gives it a sweeter, more refined flavor.
