A pairing dinner and lunch will be held by HEAVENSAKE, a luxury Japanese sake brand with branches in over 10 countries around the world, and Saiki, a Kyoto cuisine restaurant in Gion, Kyoto that has been awarded a Michelin star for seven consecutive years since 2011. This is a great opportunity to experience the marriage of Kyoto cuisine in Gion, Kyoto.
HEAVENSAKE
The luxury sake brand HEAVENSAKE, which is currently available in more than 10 countries around the world as a Japanese-French blended sake, will make its Japan debut in November 2024. The most notable thing about it is that it is created by Regis Camus, a legend in the champagne world who is also known as the god of blending.

Regis Camus has been the Chief Winemaker of Piper-Heidsieck, a French Champagne house loved by celebrities around the world, for many years, and has been awarded Winemaker of the Year a total of eight times. Most Champagne is actually made by assemblage (blending), and the outstanding techniques and culture of assemblage are deeply rooted in the winemaking process.

Kyoto Cuisine Chokushinbo Saiki
HEAVENSAKE will be pairing its first dinner in Kyoto with Jikishinbo Saiki, located in a quiet alley in Gion, Kyoto. Having been awarded one Michelin star for seven consecutive years since 2011, Saiki offers Kyoto cuisine with a focus on umami, woven together with tradition and a unique sensibility.

After training for six and a half years at Japanese restaurants and hotels, the third-generation owner, Mitsuru Saiki, took over the 3-year-old traditional Japanese restaurant "Saiki" and moved it to its current location in 6. While exploring Japanese cuisine as an active chef, he also studies at university and searches for the secrets of deliciousness every day.
"We want you to experience the freshness of the seasons in Kyoto cuisine with all five senses," says the owner, who conveys the seasonal climate of Kyoto through food. You can experience the freshness, beauty of the skin, fragrance, and fragrant earthy smell that only fresh ingredients can give off in a relaxed atmosphere rich with the Kyoto atmosphere.
Pairing sake

The meal includes six seasonal dishes plus a rice dish, and three bottles of HEAVENSAKE wines - Azur, Orange, and Noir - for dessert.
Three products will be offered this time: "Rebe Noir Junmai Daiginjo" by Miyagi's Shinzawa Brewery, famous for "Hakurakusei," "Label Orange Junmai Daiginjo" by Saura, the brewery behind "Urakasumi," and "Label Azur," produced in collaboration with Yamanashi Meijo Co., Ltd., known for the Shichiken brand.
"An assemblage is like a puzzle. It is made up of multiple pieces. Adding 1% can completely change the taste. What I think is great is that the magic of assemblage is much more than XNUMX + XNUMX = XNUMX!" says Regis.
Regis' 40 years of Champagne skills shine through, with some wines undergoing more than 30 tests, while others are decided in just one day. However, regardless of the number of tests or the number of days it takes, the important thing is to keep going without compromise until it reaches a perfect state. Of course, he also works with sake breweries. Another feature of HEAVENSAKE is that it only uses junmai sake. This was intentional, but in the end, he tasted a variety of sakes and chose the junmai one that he thought was the most delicious.
