Tanabe Sake Brewery's Junmai Daiginjo "Toki," a sake celebrating the 20th anniversary of Eiheiji Town in Fukui Prefecture, will be released in limited quantities through hometown tax donations!
To commemorate the 20th anniversary of their merger, Eiheiji Town in Fukui Prefecture will release only 20 bottles of Junmai Daiginjo "Toki," a sake aged for six years at ice temperature by Tanabe Shuzo, exclusively for hometown tax donations. This special bottle, carefully aged to mark the 120th anniversary of the company's founding, is a one-off limited edition that will never be available in stores.

Tanabe Sake Brewery has been brewing sake in the rich natural surroundings of Eiheiji Town, Fukui Prefecture, since its founding in 1899. Blessed with the clear waters of the Kuzuryu River, underground water from sacred Mount Hakusan, and the rice-growing Fukui Plain, the brewery carries out every step of the process by hand, from steaming the rice in Japanese pots, making koji, and carefully squeezing the mash in a traditional vat press.

The brewery's philosophy is "time and effort is the greatest luxury." They do not seek flashiness, but instead adhere to the "simple sake brewing" approach that is in line with the spirit of Zen. They do not mass-produce, but rather brew each and every drop with care. As a result, they have won numerous gold medals at competitions both in Japan and abroad. At the 2023 All-American Sake Appraisal, they won the Grand Prix (No. 1 in the United States) in the Daiginjo category, and are known as a brewery recognized worldwide.

This "Toki" is a special bottle of Junmai Daiginjo unpasteurized sake, brewed in 2019 to commemorate the 120th anniversary of Tanabe Shuzo's founding, which has been ice-aged for six years in the brewery. By quietly storing it at low temperatures, the mellow, deep flavor and the rounded umami that comes with time are brought out. This flavor, which the brewery has refined over time, will be released to coincide with the "milestone" of Eiheiji Town's 20th anniversary.
This limited edition sake is a precious item that can only be obtained through hometown tax donations. It will not be sold in stores, and all 20 bottles will be specially designed to go to the donors. The "no resale" rule is not just a restriction, but also an expression of the brewery and the town's desire to "cherish the bond formed through hometown tax donations."
Starting with this project, Eiheiji Town will be announcing "local masterpieces to celebrate the 20th anniversary" over the course of three consecutive months. The first in the series, "Toki," will be the opening theme.
