"Nippon Kodo" x "Miyaizumi Meijo"! A Japanese sake with a fragrance that changes like a fragrance [AKIGASUMI] will be released on September 15th, limited to 300 bottles
Nippon Kodo, a long-established fragrance maker, and Miyaizumi Meishu, the brewery behind the popular brand Sakura, have teamed up for the first time. A pasteurized bottle of Akigasumi sake, a sake whose aroma changes like a fragrance, will be released on September 15, 2025. The unprecedented method of combining three types of yeast and two types of Fukushima rice allows you to experience the changing aroma and flavor.
A pasteurized bottled product (720ml) of "Akigasumi," the first jointly developed Japanese sake by Nippon Kodo, a long-established fragrance company, and Miyaizumi Meishu in Aizuwakamatsu, Fukushima, which brews the popular brand "Sakura," will be available on the Ginza Rangetsu official online shop (https://rangetsu.shop-pro.jp/) and in-store (Ginza Rangetsu Sake Tasting Bar Sake no Ana), with a limited quantity of 300 bottles.

Dawn haze – AKIGASUMI –
Its greatest feature is the unique brewing method of using three types of yeast (F7-01, 1801, and Kira yeast) simultaneously in one tank. This challenging method was adopted in order to pursue a complex aroma. By carefully harmonizing yeasts with different fermentation speeds, layers of aroma that change over time are achieved, from top notes to middle and last notes. Furthermore, the rice used is the soft umami "Fukunoka" and the crisp "Gohyakumangoku", achieving a balance of clear umami and crispness.
The product name "Akatsuki Kasumi" ("Dawn Mist") is named after the image of the mist that hangs over the mountains at dawn in spring, and the overlapping of colorful iridescent clouds. The worldview of this product, which combines transparency and complexity, is reflected directly in the bottle design.
The aroma and brilliance are not overly exaggerated, but rather have a refined and modest beginning. As the temperature and time change, new aromas and flavors emerge one after another. It pairs well with a wide range of dishes, including sashimi, fried foods, vegetables, meat, and fish, and is recommended as a drink to accompany meals.
