The second part of the 20th anniversary of the merger of Eiheiji Town | The miraculous "Eiheiji Hakuryu Junmai Daiginjo Fukurotsuri Shizukuzake - Stored in ice for 18 months" (limited to 50 bottles) is now available for hometown tax donations!

To commemorate the 20th anniversary of its merger, Eiheiji Town in Fukui Prefecture will be releasing a limited edition of 50 bottles of "Eiheiji Hakuryu Junmai Daiginjo Fukuro-tsuri Shizukuzake 720ml - Stored in ice for 18 months," a sake made using traditional methods by Yoshida Sake Brewery, for donations to the local community.

This Shizuku sake is made using the finest sake rice, "Yamada Nishiki," polished to 40%, and only the "naka-kumi" part of the mash, which has the best balance of flavor and aroma. Furthermore, it uses a traditional method called "Fukuro-tsururi," which involves collecting every single drop that drips from a cotton sake bag under its own weight without applying any pressure, a method that requires the utmost time and effort.

The collected drops are stored in a 18-liter bottle at -5°C for approximately 18 months. This preserves the freshness of the freshly pressed sake while elevating it to a smooth, elegant, and soft quality. Bottled unfiltered and without added water, and finished with a "bottle heating" method that locks in the aroma, this sake is truly the culmination of the brewery's philosophy and the artisan's skills.

Yoshida Mako, the second daughter of the brewery owner, became the youngest female brewer in Japan at the age of 25.

Yoshida Sake Brewery, which brews Shizuku Sake, is a brewery with over 200 years of history, having been founded in 1806 (Bunka 3). The brewery is a "zenryo junmai brewery" that uses rice produced in Eiheiji Town, Fukui Prefecture, and makes all of its products using only rice and water. They are committed to brewing sake that is in keeping with the "Eiheiji terroir," pursuing everything from the local soil to the brewers.
This attitude underpins the value of this special limited edition sake, and its quality is also attested by the high acclaim it has received, including winning the gold medal at the National New Sake Tasting Competition for four consecutive years.
