From the Okitama region of Yamagata Prefecture to the world - Nakaoki Sake Brewery launches "Okitama Terroir" sake brewing project

Nakaoki Sake Brewery Co., Ltd. has begun a crowdfunding campaign to launch "BIRD," a new brand of sake brewed with "Okitama Terroir," a specialty of the water and rice of the Okitama region of Yamagata Prefecture.

Founded in 1923, Nakaoki Sake Brewery is located in Kawanishi Town, Yamagata Prefecture, in the Okitama region, surrounded by Mount Azuma to the east, the Asahi Mountain Range to the west, and the Iide Mountain Range to the south, and nurtured by the waters of the Mogami River. Their goal is to create sake that soothes the souls of those who drink it.

This time, with the desire to continue to pass on the flavors that have been passed down through the region, as well as the scenery that produces the rice and water that are so important for sake brewing, for 100 years to come, and with the desire to share the flavors of Okitama with the world, they are taking on the challenge of launching a new brand, "BIRD," of "Okitama Terroir," which is packed with the flavors of the region, brewed with water and rice from the Okitama region of Yamagata Prefecture.

What is the new brand "BIRD"?
Nakaoki Sake Brewery wants as many people as possible to know, imagine, and taste the scenery that it cherishes. The new brand "BIRD" is a symbol of this. The name pays homage to the British author Isabella Bird. As "sake that brews a magnificent view," this bottle encapsulates the entire nature of Okitama.

──Taste──
The moisture of melting snow, the transparency of light shining on rice fields in winter, and the deep scent of the forest and earth.
With one sip, you'll be greeted by a pure, snowflake-like sensation, followed by the gentle warmth of the earth and trees.
It is just like the Okitama Basin seen from Utsu Pass, the image of "humans and nature in harmony" that Isabella Bird saw.
A sake that combines tranquility and strength, allowing you to savor the scenery of the local region.

──Sake brewing──
The sake rice used this time is "Sake no Hana," a sake rice developed by Kudo Kichirobee, a breeder from the Shonai region.
Cultivation had once ceased, but in 2000 Nakaoki Sake Brewery revived it using just 30 grains of rice seed.
The new brand "BIRD" is brewed with lightly polished rice, deliberately avoiding excessive grinding, in order to express the characteristics of this rare sake rice "Sake no Hana."

・"BIRD" is a brand treasured bottle made with the rare sake rice "Sake no Hana"
- A Junmai Daiginjo made with "Yuki Megami" rice, made to order from a sushi restaurant in Hong Kong.
However, due to the COVID-19 pandemic, shipments were halted, and the only unlabeled bottle left in the brewery was the "Sleeping Goddess."
