What is “Dejima Hosendo”?
``Dejima Hosendo'' was founded in June 2021, at the same time as Mr. Hinata, the representative, became the brewmaster of ``Kihanano Brewery'', an urban brewery in Asakusa, Tokyo.As the head brewer, he brews using other companies' equipment and independently plans events that combine sake experiences with cooking, sake ware, and traditional performing arts, as he works to express and disseminate sake as a pillar of Japanese culture in a multifaceted manner. We decided to open a physical store because we wanted to create a space where we could convey the essence of sake and express its appeal.

The standard product ``Hosen'' aims to deepen the unknown charm of Doburoku, and within the framework of old-style Doburoku, which is basically brewed only with rice, we are trying to find ways to ``harmonize with the modern table scene as an accompaniment alcohol.'' We are pursuing "Can we do it?"
In conclusion, in today's over-sophisticated table scene, Doburoku has the impression that it is an alcoholic drink that tends to be divided into two, with some people saying it promotes unfashionable taste, while others think it's innovative. Masu.In reality, there aren't that many brewers, and the quality is a mixed bag, so as a result of the lack of accurate information and the fact that its appeal hasn't expanded or deepened, it seems like sake has been relegated to the back seat of country sake. is hard to deny.
However, I am convinced that Doburoku is one of the world's brewed alcoholic beverages that Japan is proud of and has great potential.Is there anything other than Doburoku, a rare alcoholic beverage that stands between the classical and modern, creating a primitive and avant-garde character with the richness and vividness of information provided through the five senses?
