``Freshly squeezed raw sake'' chilled in the snow during the winter from ``Hida Kawai Yamasachi Kobo'' in Hida City, Gifu Prefecture, is delivered all over the country on hot summer days.The box is filled with natural snow and peach branches with buds.
Yukichusake is a sake made in Kawai-cho, Hida City, Gifu Prefecture, which is known for its heavy snowfall.
It is cooled with real snow for about 3 months and then shipped with the snow all over the country.
Sake making in the snow begins in January by collecting spring water from the local Mt. Amosan, and in February they create a snow room that can store more than 1 bottles of sake. In early March, freshly squeezed raw sake is stored in a snow room at approximately 2℃.
After being cooled and aged for about three months (approximately 3 days), it is shipped all over the country with cooling snow during the heat of July.
Yukichusake is brewed by Watanabe Shuzoten in Furukawa-cho, Hida City.The local sake ``Hourai'' is indispensable to the local people of Hida.
The sake rice used is locally produced ``Hidahomare,'' and the rice is soft, mellow, and full-bodied, with the aroma and richness of the rice.
The label was written by Keison Shigesumi, a calligrapher with the era name ``Reiwa.''
It also contains ``peach branches with buds'' collected from an orchard in Hida City, which were stored together with the snow sake.You can also experience the joy of blooming in about a week after opening the lid.
