[Ryo Kawashima] is located on Kurumayamachi-dori, right next to the lively Karasuma Oike intersection.The owner, Ryo Kawashima, has trained at Michelin-starred restaurants overseas, including Arashiyama Benkei, and previously served as the head chef at a Japanese restaurant, Miyagawacho Suiren.Opened in September 2022 after becoming independent, this is a Japanese restaurant where you can enjoy menus that skillfully combine seasonal ingredients.
The chic space, located in a renovated townhouse that was built about 100 years ago, is particularly eye-catching with its chic monochrome interior and large, wide, flat counter.The counter was built at Mr. Kawashima's own request, and when you take a seat, you can see it right in front of you.He generously shows guests every step of the way until the food is ready, including handling the knife, preparing the soup stock, and plating the food.
The omakase course is 12 yen and includes about 16,500 dishes, starting at 18pm.One example of Oryogi is mackerel sushi, which is made by placing grated kelp, fermented fresh ginger, myoga ginger, and perilla leaves on top of mackerel sushi that is not pressed.
Aori squid thread making is seasoned with salt and citrus juice.The homemade karasumi (karasumi karasumi) added to the finish adds color.
