The dish, which includes seasonal Kyoto vegetables along with the beef, is full of seasonal flavor and a visual treat. The dashi stock is carefully crafted to complement the beef in Japanese cuisine, and two types of kelp and bonito flakes are blended together. This premium sake was created through the collaboration of three Kyoto breweries (Masuda Tokubei Shoten, Kitagawa Honke, and Matsui Sake Brewery) using the "assemblance" technique of blending sake. The concept is to create a sake that pairs well with Wagyu beef.

"It's a special sake that is only available in limited quantities. It has a light and smooth taste, and I think it goes well with any dish. It's great as an appetizer, a soup, or to drink while waiting for a hotpot to be prepared."
