We spoke with Norimasa Yamamoto, President and Representative Director of Heiwa Sake Brewery Co., Ltd., about the store's concept and his thoughts on Doburoku.

Doburoku has a variety of possibilities
--First of all, please tell us why you became interested in doburoku.
山 本 When I thought about creating a place where people could easily experience the moment of brewing for Japanese sake, similar to the brewery pub style of craft beer, where sake is brewed on the spot and served to customers, I thought Doburoku could do that. It was.It feels like craft sake.Also, it's interesting that Doburoku can be made with a variety of auxiliary ingredients, and I think this could lead to the creation of a new type of rice-based sake.Furthermore, it is easier to offer to customers because it has a lower alcohol content than sake.
――Aside from rice and rice malt, what kind of auxiliary ingredients do you use?
山 本 Plain, red bean, black bean, hop, and white koji are the standard here, and we also have seasonal doburoku that changes weekly, and currently we have blueberry, matcha, and 8-grain rice.The fermentation container is very small. It's about XNUMXL in size and is generally called a pan, but we call it a tank.Scoop it out and pour it into a glass.

--It really has a craft feel to it!It smells very nice.I see, it's the same as when you go on a tour of a sake brewery and you can see the moromi bubbling.
山 本 Yes, you can see it right in front of your eyes.The great thing about this place is that it is made in such a small size that it can be served on a daily basis.It will be ready in about 2 weeks.
--When you say Doburoku, do you mean making it in the traditional way?
山 本 Well, our current method of making sake is somewhat modern, and since it is done by a sake brewery, it is mixed with Japanese sake brewing techniques.The taste is new, and it feels like it has a good balance of sweetness and acidity, with a bit of yogurt.Our customers often say things like ``You look surprisingly beautiful'' and ``You look refreshed.''
--How do you like the bar food lineup?
山 本 We have a selection of items that go well with Doburoku and go well with alcohol.It just so happens that a lot of our products are from Wakayama, or rather, we are a sake brewery in Wakayama.We also have Kinzanji miso, sansho pepper, handmade sesame tofu, Wakayama whitebait, and Wakayama ramen.
――There is also Doburoku curry.Do you use doburoku as a secret ingredient?
山 本 that's right.This is a pretty unique knob.It goes well with alcohol.
――There are also lots of other delicious items such as fruit kimchi and ash-dried sanma.

山 本 Of course, you can enjoy ``Kido'' as well as our craft beer ``Heiwa Craft'' on the live server. It is recommended because it uses underground water from the Kishigawa River, which flows from Mt. Koya, the same as ``Kido'' and the liqueur ``Tsurubai.''We also have a retail store, so if you like the alcohol you drink, you can buy it on the spot and take it home.
-- Lastly, please tell us about the topic of Heiwa Sake Brewery.
山 本 Last year, we opened a rice mill and are now able to carry out integrated brewing, from cultivating Yamada Nishiki to polishing the rice and producing sake.I think we have taken a new step forward.

--It seems that "SAKE PARK", which was held for the first time this year, was a great success!I heard that Heiwa Sake Brewery took the lead in setting up the executive committee.
山 本 It was a huge event, with 26 breweries from all over the country participating, and approximately 1 people gathered on the lawn of MIYASHITA PARK in Shibuya. In order to change the current state of the Japanese sake industry, which has continued to decline in production since its peak in the 2000s, we called for an event that would allow us to reach out to younger generations who have had fewer opportunities to experience sake, as well as people from overseas.It was very lively, with cutting-edge sake and craft salmon* all gathered together, and because it was in the center of the city, there were many overseas and young female customers.After all, it is the center of Shibuya.It is a place that is like a base for youth culture.I think it was good for the future of sake.Since it was an outdoor event, there was a sense of groove and it was fun!Special food provided by chefs from famous restaurants was also popular, and we also used crowdfunding to prepare special plans such as the right to participate in the eve and after parties.We plan to hold regular meetings once or twice a year in the future.This is the birth of an event that can be enjoyed under the blue sky, regardless of nationality, age, or gender!
