Hayosena
Profile
A lawyer and food consultant living in Kyoto who walks around eating food with the motto “drink☆eat☆eat”

daysTwitterThe information on good stores provided by is extremely reliable. The sequence of dinner → bar → ramen → public bath to prepare your body is surprisingly fast paced. Her real face, which she refuses to show, is unknown to others.Evening plans are booked up to three months in advance.

Together with Hayosena, we went to a restaurant that serves delicious sake.

"I'm not allowed to show my face, so please excuse me for using the logo."

``This time I would like to introduce you to [Kushiyaki Inota] located in the Masugata shopping district of Demachiyanagi.I have been going there since my school days, and as I get older, I grow more attached to it and like it more and more! It's really wonderful. As for the restaurant...When the weather gets a little cooler, I always think of the "Chicken Mizutaki" (reservation required). This is a super delicious hot pot that is guaranteed to leave you completely watered down.By the way, Mr. Inoda is good at both yakitori and kushikatsu, but his personal specialty is the derenderen torontoron dashimaki. ”

So I went to [Kushiyaki Inota] with Hayosena!

A 6-minute walk from Demachiyanagi Station, the large red lantern is the landmark.A talented yakitori restaurant located in the Masugata shopping district. Even after celebrating its 2022th anniversary in April 4, the atmosphere inside the store is lively every day.

Menus lined up on the counter. We recommend the yakitori, which uses carefully selected high-quality chicken such as Kyoto Red Chicken, Nagoya Cochin Chicken, and Miyazaki Chicken. In particular, you should try the recommended menu items, such as the white liver, which is only harvested once out of 2000 birds, the meatballs, and the skin. The carefully selected sake menu is displayed with a lineup of dry drinks starting from the right.

In the grilling area, the shop owner, Mr. Okuda, carefully grills each stick one by one, and the aroma of charcoal grills wafts not only inside the shop, but also in front of the shop. When I took a special seat at the counter, the first thing I did was have a beer. They are very particular about their beer, saying, ``If the beer isn't delicious, no matter what you eat, it won't be delicious.'' They make no compromises in everything from cleaning to pouring methods.

The first thing Hayosena orders is potato salad (550 yen).

Smooth potato salad is the best first dish. The tomato garnish is cool and a nice accent.

The long-awaited dashimaki (660 yen)

The dashimaki is extremely thick and voluminous. The secret to its melt-in-the-mouth texture is the yam inside, which gives it a rich, melt-in-the-mouth texture. It's no wonder that foodie Hayosena is so excited.

Next, today we will be comparing the skins in a special way.

In recent years, there has been a focus on the leather, and there are about 3 to 4 types available depending on the day.On this day, from the left, the skin of Miyazaki chicken, the "waste chicken" chicken that has finished laying eggs, the butt skin, and the skin of young chicken. It's rare to find a shop that has so many different types of leather. The texture is different and the taste is completely different, so it has a lot of depth.

And the famous white liver.

Special photos of white liver and normal liver.

I was surprised at the difference in color.Because it is a specially selected material, there are many days when it is difficult to obtain.I would definitely order it if it were available.White liver is ranked as special, high, or medium depending on the stock, and today it is ranked high.It is served with the recommended sesame oil, salt, and sauce of your choice.

Oyadori Amiyaki (935 yen)

Made with used chicken, it has an excellent texture. There are many ways to enjoy the juicy, aromatic texture.

After beer, try some recommended sake.

  • Kochi Tsukasa Botan Funenaka Hassaku Junmai Super Dry Freshly Squeezed Namazake

Spicy enough to cut through the oil from the chicken. In addition to the year-round product ``Funaka Hassaku'', the freshness and ginjo aroma of freshly squeezed sake is added for a refreshing taste.

  • Kanagawa Izumibashi Sake Brewery Izumibashi Megumi Blue Label Junmai Ginjo Sake

It goes perfectly with yakitori. It has a refreshing and gentle citrus aroma and a glossy texture.A perfect balance of deliciousness, sweetness, and sourness.

  • Shimane Wangi Sake Brewery “Super” Wangi Sake Brewery

Brilliant spiciness. It has a deep flavor and is extremely stable.Only the ones that have perfected their flavor after adding water, boiling them in a bottle, and pasteurizing them at a low temperature for a year and a half are sold. This is the core product of Ohgi Sake Brewery, which continues to be enjoyed for a long time.

Dry food goes well with yakitori, and even though it's mainly dry, the sake and food are two sides of the same coin.

Mr. Okuda says, ``Sake is a luxury item! I just want people to drink delicious sake,'' and is committed to buying brands he likes from all over Japan and drinking them himself. The restaurant's layout of cold sake vs. Juyondai is proof that there are many Japanese sake lovers.Regular customers who are discerning customers often entrust Mr. Okuda with the brands and have a strong sense of trust.

After talking with Mr. Okuda, we naturally reached for sake, and we had yakitori and sake together. It is also charming that she tends to drink too much. She also wants to try the mizutaki (reservation only).
