At a hidden Japanese restaurant
Get intoxicated by the local sake and the skill of the owner
As you walk deeper into the building in Takatsuji Miyukicho, you are greeted by a pure white door. When I mustered up the courage to enter the store, I couldn't help but relax when I saw the owner's smile behind the counter. The owner, Mr. Sawai, who honed his skills at Girogiro in Kyoto, opened Takatsuji Kasui this spring as a Japanese cuisine restaurant that already has many regular customers.Instead of greeting customers, customers are offered one soup and two dishes until their second visit. The reason why we don't have one soup and three dishes is because we don't want to be able to order just one dish. The approximately 2 types of sake carefully selected from all over Japan are mainly umami, where you can feel the flavor of rice. It is kept at -10℃, so you can always enjoy it in its best condition.
The interior has a stylish concrete wall that overturns the image of a Japanese restaurant.
Behind the 10-seat counter, there is a table for four people.
Recommended dishes
Grilled duck with Japanese pepper: 1,210 yen for half, 2,200 yen for XNUMX piece (half shown in photo)
Tender duck meat slowly grilled over charcoal and topped with a special sauce. The duck fat and tendon are carefully prepared, and the sauce, which is made with Japanese pepper grains and powder, has a refreshing aroma.Pairing it with fresh orange makes it even more refreshing.
Sashimi of Spanish mackerel and redfish 1 yen per person
The owner, who still works in the fish department of the Central Wholesale Market, buys in-season fish.On this day, we will be making sashimi, known as high-quality fish, and Spanish mackerel from Okayama.Oribe ware plates, said to be the owner's favorite, complement the dishes.
Eel tofu (one soup and two dishes 2300 yen + tax)
One soup and two dishes whose contents change every week.Today's item was inspired by ``unagi tofu'', which is made by sandwiching eel with tofu.Inside the fluffy Hirosu is eel grilled with sauce. For the filling, combine the bonito and kelp soup stock with Kujo green onions.
Japanese sake with a perfect summer feel
Glass of sake starts from 770 yen
Sari Furin Dry Junmai Daiginjo (Fukui Prefecture/Mouri Sake Brewery)
This brand is perfect for summer with an aftertaste that blows through you like a cool breeze. It is easy to drink with its crisp, firm mouthfeel and well-balanced acidity, and is recommended to be paired with seasonal fish such as sashimi or grilled fish.On a hot day, chill out with cold sake.
Natsugumo Special Pure Rice Raw Sake (Shimane Prefecture/Fuji Sake Brewery)
A fresh and rich unprocessed sake with the image of a magnificent flavor reminiscent of summer clouds. The strong drinkability goes well with summer dishes and whets the appetite. The specialty sake rice is ``Saka Nishiki,'' which is grown with reduced pesticides in Izumo, where the brewery is located.
Yamagata Masamune Summer Junmai (Yamagata Prefecture/Mitobe Sake Brewery)
A summer sake with a cute label of fireworks going off on a summer night.Although it is refreshing and light, the flavor of the rice is deep and it perfectly absorbs the food. The refreshing lychee-like scent is truly summer-like, and the aftertaste is as gorgeous as fireworks.
Why the store is loved
Sawai's trademarks are black round glasses and a bow tie.He started this business even before he became independent so that his customers would remember him, and now he is a household name. The menu changes once every three days, so you won't get bored no matter how many times you come.We keep our prices low because we want people to come here casually. It goes without saying that they are particular about their ingredients, but they are not always high-quality.Even the pickled chrysanthemum that accompanies the sashimi is meticulously crafted, and the uncompromising preparation brings out the goodness of the ingredients many times over. With Mr. Sawai's personality and his passion for cooking, it's no surprise that once you visit, you'll become a fan of the restaurant.
