A popular store said to change the sake industry
“Kinaru Liquor Store Tane” was born in Kyoto in December 2022.
Although it is a hidden gem located on the third floor of a building right next to Shijo Karasuma, word of the story is slowly spreading and sake lovers from all over the country flock to this hidden liquor store.
As expected, the owner, Mr. Inoue, opened his own business in 17 after working for 2022 years at Yamanaka Sake no Ten, a Japanese sake specialty store in Osaka. He was originally a regular customer of the sake bar ``Takahashi'' on the 2nd floor of the building, and when the store became vacant, he decided to open on the 3rd floor of the same building based on Takahashi's recommendation. The store was named ``Tane, a liquor store that becomes a tree,'' taking into consideration family life and natural trees.
The idea is that the seeds will sprout and become big trees.
Mr. Inoue, who is said to be the brains behind ``Yamanaka Sake Shop'', thinks the next stage is ``a liquor store that has never existed before.''Rather than the sake that many people like, Mr. Inoue has discovered it himself and wants to convey it.
5 minutes walk from Shijo Karasuma. The moment you open the door on the third floor of the building, you are enveloped by the refreshing scent of wood.
The person who will welcome you is the owner, ``Katsu Inoue.''

- Mr. Masaru Inoue
-
ProfileBorn in Okayama. He was attracted to sake and worked at Yamanaka Sake Shop for 17 years before opening his own business in December 2022.
Mr. Inoue started the business mainly as a liquor store, with a corner of the store where you can sample recommended brands.Through his connection with the sake brewery where he worked before, he discovered unique Japanese sake from about 25 breweries that was created with a sense of the season in mind, in hopes of getting people to know more about the professional taste. We also have a lineup of brands that you can't find in Kyoto.
Here are the brands we sampled today.
The tasting fee is 3 yen for 900 glasses. Counting the number of cups using "acorns" with the concept of "growing from a tane to become a tree".We use sake vessels made by hand by woodworkers in Higashiomi. The main shelves lined with sake bottles inside the store are also made of wood from Higashiomi.
Mr. Inoue's talk begins right in front of the counter.Proposal-based sales that only Mr. Inoue can do because he has a wealth of experience. We carefully examine the customer's preferences and experience and recommend six types of brands in the order they are looking for.Of course, you can also select other types than the 6 types. Many people were surprised and said, ``I've never tasted alcohol like this before!''
I also appreciate that they take their time with each cup while communicating with each other.Sometimes I mix it with cold sake or hot sake, and by the time I drink my third drink, I am captivated by the outstanding taste. You can clearly see it being rolled in Inoue's palm like an acorn. And as soon as the last cup was taken, it landed on a bottle I had never seen before.
The back is a retail sales space, and you can come and go as you like, so you can see for yourself.
If you are interested, let's go find ``Kinari Sake''.
5 books recommended by Mr. Inoue “now”
1. Miyagi Prefecture Kananoi Sake Brewery Wataya Junmai Ginjo Kurosawa Rice Toyonishiki
Strike sake is often suggested by Mr. Inoue as the first drink.
We proposed a version using the Toyonishiki rice variety, which has the potential to be used as an accompaniment to a meal, produced by Mr. Kurosawa, a full-time farmer who grows crops without pesticides or chemical fertilizers in a vast rice field inhabited by rhinoceros shrimp.Junmai Ginjo is a little more flavorful for a cotton shop.
2. Osaka Akishika Sake Brewery Akishika Junmai Sake, Directly squeezed from tank, Uses polyacid yeast, Namazake
The brewer himself grows rice without using pesticides, and the Akishika sake has a distinctive high acid quality.
The Polyacid Junmai series aims to take the "pursuit of acids" even further.
Among them, this sake, which was freshly squeezed directly into the bottle in February 2023, is
The uniqueness of Omachi, which is grown without pesticides in privately owned rice fields, is hidden in the sweet and sour taste.
3. Shimane Wakabayashi Sake Brewery Kaishun Wooden barrel-stored sake Junmaishu
A rare sake that is aged in wooden barrels for 1 year and bottled for 7 to 8 years.
It features the aroma of barrels and a rich taste, making it easy to adjust the taste.
When you drink it warm or hot, you can feel the changes in umami, richness, flavor, and aroma.
4. Nara Miyoshino Brewing Natural selection
A rare sake that is brewed in Yoshino cedar barrels, producing approximately 700 bottles at a time, with only 3 barrels being brewed each year.
Sake that is brewed while being close to the nature of Yoshino.
Because it is naturally selected and trained, the taste will vary slightly depending on the bottle.
Was this encounter a coincidence or a necessity?
5. Okayama Rakushu Brewery Taisho no Tsuru RISING Asahi x Omachi
The orange packaging is inspired by the rising sun.
Omachi rice is used for the koji rice and sake mash, and Asahi rice is used for the kakemai.
A hybrid sake of Asahi rice and Omachi rice.
The hot sake is outstandingly delicious.
Future prospects
In the future, listening to Mr. Inoue talk about things that don't fit into existing frameworks, such as ``I want to sell sake stored in a cave in Higashiomi,'' the editorial department, which is interested in ``aging,'' got excited. can't stop. There are also plans to open a food and drink corner where you can enjoy Inoue's recommended sake.
