Currently, sake brewing in Fushimi is done using Tokiwa Isui, one of the Seven Famous Waters of Fushimi.The amount of water gushing out from the premises reaches 28 tons per hour.
The "New Tokiwagura", which was introduced in 7, has an integrated sake brewing system and controls koji mold and yeast.While incorporating new techniques with the changing times, the craftsmen continue to preserve the taste of the brewery using traditional techniques.
