Sake brewing has been passed down from generation to generation since the Edo period in Aisho Town, located on the east side of Lake Biwa.Using only new rice suitable for sake brewing from Shiga Prefecture, the brewery continues to brew flavorful sake with abundant water and the traditional techniques of Noto's chief brewer.
Every year, a special sacred sake (white sake) is offered at the Niinamesai, a ritual held in the imperial court to celebrate the year's abundance.They are also dedicated to shrines across the country.The sake brewery, built in the Taisho era, is designated as a registered tangible cultural property of the country, and has even been used as a filming location for a TV drama.The storage room, where the sake sleeps in silence, is made entirely of zelkova wood and is impressive.
If you make a reservation, you can tour the sake brewery and learn more about the process of making sake, including tasting the ``Shikomizu'' used in sake brewing.Regular events such as brewery openings are also held regularly.
A directly managed store [Kakuregura Fujii] opened in the sake brewery last fall where you can enjoy Japanese sake and seasonal dishes.In addition to a variety of Japanese sake from [Fujii Honke] including the representative brand ``Asahi'', we also offer seasonal ingredients filled with the charm of Omi. You can enjoy it.
