Mt. Kongo Doji, the main peak of the Kumano Mountains, rises in the Tango Peninsula in northern Kyoto Prefecture. [Yoshioka Sake Brewery] has been licensed to brew sake in Yasaka Town, located at the foot of the mountain, since XNUMX.

The brewery has inherited the tradition of making sake using underground mountain water in a place rich in nature.The water quality is hard water with a sweet taste, giving it a dry yet gentle impression.The special manufacturing method is the old-fashioned ``fune squeeze''.

Sake bags filled with moromi are stacked on top of a wooden frame, and pressure is applied to carefully squeeze the sake.The time-consuming and labor-intensive process produces high-quality sake without any unpleasant taste, and the by-product sake lees retains its flavor.In addition to sake, you should also try the flavorful amazake and kasujiru at least once.
