Incorporating appreciation for the climate into sake brewing
For over 150 years since the end of the Tokugawa shogunate, we have been devoted to sake brewing in Nishi-Omi, overlooking the Hira Mountain Range.It is said that the sake was named ``Matsu no Hana'' to reflect the family owner's feelings about the old pine trees that had to be cut down to construct the sake brewery.Taking advantage of the climate blessed with delicious sake rice and abundant water, we inherit the brewer's spirit of seeking authentic taste while considering the health of the drinker, with the belief that ``sake is inherently simple and exquisite.''
Its mellow texture, rich flavor, and mellow aroma have been refined over a long history. In 2002, Daiginjo ``Matsu no Hana'' won the gold medal at the global food contest ``Monde Selection.''In Japan, it has also been highly evaluated at various competitions, including the Gold Award from the Sake Competition sponsored by the National Tax Agency.
While creating new flavors that are popular all over the world, we also carry out activities to preserve the local environment.
