Kitagawa Honke
Founded in the early Edo period1657It is said that even before that, the first Funaya Shirobei, who ran a boat inn on the Uji River, produced sake that he served to his customers, which became popular. In Fushimi at the time of its founding83There used to be a number of sake breweries, but only the main Kitagawa family and one other brewery remain today, giving a sense of the weight of tradition.
While incorporating modern equipment and the latest technology, we value human skill, and under the direction of Yoshifumi Tajima, the brewer, we work with the team strength of our brewers. Tajima Toji has been recognized as a ``Modern Master Craftsman'' by Kyoto Prefecture and a ``Future Master Craftsman'' in Kyoto City's traditional industry, and has been recognized at the National New Sake Appraisal.13Received the Gold Award (as the main family of Kitagawa)21(awarded twice).
We are particular about the rice and water used as raw materials, and in particular, ``Tomio Junmai Ginjo Tanshu Yamada Nishiki'' uses all Yamada Nishiki grown with reduced pesticides at Kahoku Farm in Ayabe, Kyoto. The company president, chief brewer, and brewer all participate in the rice planting. Japan's famous water100This is a masterpiece of Junmai Ginjo that is brewed using selected Fushimi water and Kyoto Koto yeast to bring out the flavor of the rice.
The antenna shop ``Okinaya'' also sells contract-grown rice with reduced pesticides that will mill the rice on the spot. In response to customers' comments that ``the sake I sampled during the sake brewery tour was delicious,'' we are happy to offer seasonal sake delivered directly from the brewery in tanks and sold by weight.
