Since its founding150The oldest sake brewery in Hamamatsu, with a history spanning more than 30 years. We are committed to making authentic local sake, and use all water and rice from Shizuoka. The water comes from clean underground water sourced from the Akaishi Mountains of the Southern Alps, and the Shizuoka Yamada Nishiki Study Group has been established with the cooperation of local contract farmers to obtain high-quality rice suitable for sake brewing. In addition, over XNUMX years ago, the company completely abolished regular sake, and only produces sake with specific names.
The beautiful name ``Hana no Mai'' comes from the traditional votive dance that has been passed down along the Tenryu River system. The ``flower'' represents the rice flower, and the wish for a rich harvest is included.
In addition, we have a dedicated brewing facility for Daiginjo, and our Junmai Daiginjo is a masterpiece with a fresh aroma that is carefully handcrafted by young brewers and brewers. There are 6 tanks, and one charge is 1 kg. Everything from washing the rice to steaming, making koji, and preparing the rice is done consistently.

The water is underground water from the Southern Alps, and is medium-soft water with minerals, making it suitable for brewing sake at low temperatures.
In addition to traditional sake brewing, we also offer the ``Chobitto Kanpai Petishuwa'' series, a slightly sparkling sake with the refreshing flavor of Shizuoka fruits, the ``Hana no Mai Abysse'' sake made with wine yeast, and the sake without added sugar or flavoring. New products such as ``Hana no Mai Yogurt Sake'' are being developed one after another.
Abysse
Based on the concept of ``creating sake that goes well with Western food,'' sake is brewed with white wine yeast instead of sake yeast. A new type of Japanese sake, Hana no Mai Abyss, was created by using yeast from Chablis, Burgundy, France, in consideration of its compatibility with rice produced in Shizuoka Prefecture. It is truly a sake made from Burgundy yeast and rice.

By adding more "bubbles" to Abysse, it becomes unique.
