Saijo City, Ehime Prefecture, is located at the foot of Mt. Ishizuchi, the highest peak in Western Japan, and faces the Seto Inland Sea. Sudo Sake Brewery has been making sake for over 120 years in this area, surrounded by sea and mountains and boasting clear air and water.

Shuto Sake Brewery was founded in 1901 in the small town of Komatsu in the naturally rich Toyo region of Ehime Prefecture, and has been rooted in the area for over 120 years.
Since the company was founded, it has valued careful, honest sake brewing without compromise. The three brothers, including the current owner, continue to brew their signature brand, Sukigokoro, by hand, without relying on machines for efficiency or a master brewer.
"Jukishin" is the product of the brothers' perfect harmony, aiming to create a superior sake that only they could make. This brand was named by the founder, Sudo Jusuke, with the hope that "it will be enjoyed in large numbers at celebratory occasions."
We want families to drink this in a happy, harmonious atmosphere at special occasions. It is a celebratory sake that is imbued with the passion and feelings of the brewers at Shuto Sake Brewery, a family-only sake brewery.
Shuto Sake Brewery aims to brew sake with sincerity, without relying on large machines for efficiency. They pay close attention to even the smallest details, such as keeping the brewing scale small so they can keep a close eye on the brewing process and finishing the brewing of one variety before starting the brewing of the next barrel.
They pursue the finest ingredients, including rice, koji, and water. "Sukishin" is brewed using their own well water, which is fed by underground water from the Ishizuchi mountain range, as well as yeast developed in Ehime Prefecture and locally grown rice, including the prefecture's first rice variety suitable for sake brewing, "Shizukuhime," and "Matsuyama Mitsui," both of which are locally grown. The taste, which evokes the calm and gentle climate of the Seto Inland Sea, is medium dry and goes well with any snacks.
Sukishin is filled with the passion and pride of Shuto Sake Brewery. As it is made using traditional methods, production is limited, likely due to the pursuit of a unique taste. The three brothers will continue to make Sukishin.
