It started as a store selling hairdressing oil and candles in Hida Takayama during the Edo period, and changed to brewing sake during the Meiji period.The company's motto is ``Sake is something that is brewed and nurtured,'' believing that good sake is brought about by the heaven-blessed climate and harmony of the brewers.
It has its roots in Ise and Hida, and uses the local rice ``Isehikari'' and ``Hidahomare'', and brews it with clean groundwater of the Miyagawa River, which has no unpleasant tastes.
Isehikari is a ``miracle rice'' that was created from the only two plants left in the typhoon that caused great damage in the Ise region in 2.The Junmai Daiginjo ``Shoryu no Mai'' was created in 2021 from this rice, and has a gorgeous melon-like aroma and a dry taste with a refreshing sourness.The label depicting the twin dragons was handmade by a kimono family crest embroidery craftsman and emblem illustrator, making it a luxurious item suitable for special occasions.
``Hisagi'', which is made with 100% Hidahomare, comes in white and red with different yeasts from special junmai, and black from junmai daiginjo, so you can enjoy comparing them.
