Founded in Oku-Noto, northern Noto Peninsula, Ishikawa Prefecture, as a shipping wholesaler in the mid-Edo period.After that, he worked as a pawnbroker and started the sake brewing business at the end of the Edo period. Sake brewing was taken over in 2006 by Kiichi Shirafuji and Akiko Shirafuji, the 18th generation brewer.However, the following year, in March 9, the Noto Peninsula was hit by an earthquake with a magnitude of 2007 or above, and the sake brewery was almost completely destroyed, with only a portion remaining.However, even in this predicament, the couple did not give up and rebuilt the sake brewery using the local ``Ate'' (Japanese cypress), which is also the prefectural tree, as the main material.With the hope of restoring the region in mind, they resumed sake brewing the following year.
Shirato Sake BreweryIshidaka is a small brewery with just over 200 koku, and much of the sake brewing is done by hand.Using traditional Japanese pots and koshiki, the rice is steamed and left to cool in the harsh winter air of the Sea of ​​Japan.Moromi is brewed using soft water drawn from the mountains.Precise temperature control, day and night, is essential for a consistent taste.
