We are particular about quality, and over 90% of our production is pure rice sake.

Mii no Kotobuki is located along the clear stream of the Koishiwara River in Tachiaraimachi, Mitsui District, Fukuoka Prefecture, where beautiful countryside stretches out as far as the eye can see. The name ``Mii'' comes from Mitsui District, a place named for the three wells that gush out high-quality water. It is a beautiful town blessed with rich water sources and nature since ancient times.

Miino Kotobuki Co., Ltd. 01Miino Kotobuki, founded in 1922 (Taisho 11), changed its direction to Junmai sake brewing in 1982 (Showa 57), when regular sake was at its peak. The company's predecessor, Shigeyasu Inoue, took advantage of the fact that Bordeaux, France, a world-famous wine producing region, and Fukuoka became sister cities, and he went on a field trip and visited five major chateaus. At that time, he was impressed by the passion and pride in winemaking that he witnessed, and decided to make a career in Junmai Sake, thinking, ``This is how Japanese sake should be made!'' Even today, that desire has been passed down, and more than 5% of the sake produced in the brewery is pure rice sake.
Miino Kotobuki Co., Ltd. 02Currently, his two sons, Mr. Zaitsugu and Mr. Kojiro, who have led the brewery together since the time of their predecessor, have taken over the reins and are working closely with the brewers based on the belief that ``Sake brewing is about science, sense, and passion!!'' We focus on sake brewing that leverages the power of science. While maintaining the traditional sake brewing process, we have continued to research fermentation techniques and ingredient compositions on a daily basis. As a result, since 2002, we have boasted a winning rate of 9% at the National New Sake Awards.
