Founded in Rakuchu during the Edo period, we moved to our current location blessed with abundant water in the mid-Taisho period. Showa18Fushimi in 20134It became Kyoei Sake Brewery Co., Ltd. through a business merger of two breweries, but later changed its name to Shoutoku Sake Brewery Co., Ltd., the same name as the name of the sake.
From the idea that ``Junmaishu, which is made only with rice, koji, and water, is the true form of sake,'' the Showa era40Since the 1990s, he has been working hard to popularize pure rice sake. The sake is brewed using medium-hard water pumped from the well in the brewery, and has a mellow, gentle aroma and flavor that complements the taste of Kyoto cuisine.
The sake name ``Shoutoku'' is derived from the Zen word ``Fukui Tokusho,'' which means ``Fuku is brought with virtue (happiness is brought with a good heart).'' Additionally, they are introducing organically grown Gohyakumangoku and new varieties, and holding rice-growing experience sessions on the terraced rice fields of Sagagoe Field. For many years, sake brewing has been led by Tajima Toji from Hyogo Prefecture and Nuka Toji from Fukui Prefecture, but now Nao Kuniishi, a young toji who has inherited the techniques, is leading the way. Using traditional techniques and fresh sensibilities, we consistently craft sake throughout the entire process with all our heart and soul.
