[Morimoto Sake Brewery] brews sake using locally produced rice and water in the historic streets of Iga. It was founded in present-day Tsu City, Mie Prefecture at the end of the Edo period, and after suffering war damage, it opened a storehouse in the castle town of Iga. The site where Tsu no Kura used to be is now used as the headquarters for sales, and the sake brewing base is concentrated in Iga.
The soft water that springs from the Suzuka Mountains is matched with Iga rice, which has a strong flavor and is grown in a basin climate with large temperature differences between day and night. The Iga sake ``Kuromatsu-O'' is completed by using high-quality ingredients that live up to the climate, relying on the experience he has cultivated, and honing his senses as he progresses through the process. It has a soft, round taste and a smooth texture that can only be achieved with soft water. The sake brewed based on the belief that ``Sake made with soul resonates with the person who drinks it'' has a mellow yet solid core.
In addition, at VINTAGIENCE, which sells vintage sake, you can purchase a special bottle made by Morimoto Sake Brewery for aging. The spirit that continues to live even after many years is sure to shock not only Japan but the world.
