Tsuchida Sake Brewery
Kawaba Village, Gunma Prefecture. Tsuchida Sake Brewery is a small village with a population of about 3100 people that produces high-quality sake made entirely from Kimoto.
Only three ingredients are used: rice, water, and koji, as well as bacteria. Using old-fashioned techniques to derive the activities of lactic acid bacteria and various microorganisms that live in the brewery, he continues to cultivate techniques that bring out the power of bacteria every day.

The rice used is locally produced, and edible rice is used, except when there is a special request. A distinctive feature of his brewery is that he is not bound by the theory of sake and believes in not polishing it as much as possible. Maximize the umami and complex flavor of rice and its potential, and above all, use up the raw materials. Cherishing the Japanese people's appreciation for rice, they strive to make delicious sake by only grinding it to the same level as when eating it.
In addition to ``Homare Kunimitsu,'' which has been loved by the local community since ancient times, we have developed a group of unique brands based on the concept of ``creating sake more freely,'' as well as research brewing born from the curiosity of our brewers.
