A craft salmon brewery that opened in the fall of 90 in a warehouse reused from a 2021-year-old old station building in front of Oga Station, the terminal station on the JR Oga Line.
Craft salmon is a new type of sake that is based on Japanese sake production techniques, or a new type of sake that incorporates adjunct ingredients. In accordance with current Japanese law, sake is produced only for overseas export, and for domestic use, doburoku, which can be produced with a brewing license under "other brewed liquors", and agave, which is based on the manufacturing technology of sake, are produced. They produce ``craft salmon'' with supplementary ingredients such as syrup and hops.
The water that springs from Taki-no-Kashira at the northeastern foot of Mt. Kanpu is used for brewing, and the raw rice used is either naturally grown rice grown in-house or by local contracted farmers. In order to make the most of the rice, the rice polishing ratio is 90%, the same as for table rice. Natural sake is born that is packed with the climate of Oga.
The brewery has a shop and restaurant that serves as a base for sightseeing, as well as a ramen shop and a food processing plant, demonstrating its remarkable ability to revitalize the region. It also focuses on promoting interaction between people and enriching the future of Oga.
