It has been over 300 years since its establishment in the mid-Edo period. Niida Honke, which is located in the rural landscape of Koriyama City, Fukushima Prefecture, produces sake with an eye toward the next 300 years, and its mission is to ``become a sake brewery that protects Japan's rice fields.'' We do not use pesticides or chemical fertilizers in our own rice fields, and practice natural cultivation without using fertilizers by returning only the materials harvested from the rice fields, such as rice straw, rice husks, and grass from the banks.
We use a blend of natural water from Takenouchi well water (hard water) near our own fields and Mizunuri no spring water (soft water) from our own mountains for the preparation water, and we also use this natural water for rice washing and tank cleaning. It's a thorough process. The company produces natural sake using 100% natural rice and natural water, all made using kimoto. Their brands include ``Shizenshu'', which has a pleasant and rich flavor made from natural rice, ``Odayaka'', which has a clear and sharp taste, and ``Tamura'', which has a sharp and powerful taste.
We aim to be a brewery where people can gather once a month, such as holding an event where the brewery is open to the public and experiencing rice cultivation, and we are also planning outdoor activities in the future. It creates close connections and movement among people and contributes to town development.
