Izumibashi Sake Brewery, located in the grain belt called "Ebina Arable Land (Ebina Gouchi)", is a "cultivation brewery®" that carries out everything from cultivation of sake rice to brewing based on the belief that "sake brewing begins with rice cultivation." . Of the sake rice harvested from approximately 46 hectares of rice fields spread across the local cities of Ebina, Zama, and Sagamihara, approximately 8 hectares are cultivated by Izumibashi Sake Brewery itself.
The sake bottle label design also expresses the brewery's concept of rice cultivation, which involves careful soil preparation and cultivation with reduced or no pesticides. Creatures that call rice fields home, including red dragonflies, quickly disappear when large amounts of pesticides are applied. For this reason, Izumibashi Sake Brewery uses the red dragonfly as its symbol to symbolize its commitment to environmentally friendly, safe, and secure agriculture.
We manage locally produced rice, including rice grown in-house, in each field and polish it to bring out the unique characteristics of each rice field. Only Junmai sake (including Junmai Ginjo and Junmai Daiginjo) is brewed using this rice and underground water from the Tanzawa Mountains. Approximately 50% of the production is made using the traditional method of making Kimoto using natural lactic acid bacteria, which creates a deep flavor.
