A miraculous blend born from cross-breeding and cross-breeding
A new chapter in Japanese sake opens
To the world of assemblage
"Assemblage" means "assembly" or "mixing" in French, and in wine, it refers to the traditional technique of blending raw spirits. Bordeaux wine and Champagne have been and still are representative of the world because they have complex flavors and aromas that can only be created by combining wines. And now there is sake made using this method. This rich-tasting sake is created using fermentation techniques by the chief brewer and adjustments using a blender. It was created to be more complex and to increase the value of the experience for enthusiasts. Enjoy adding and multiplying umami with the dishes you pair with it.

Inquiry about the umami of food
As it warms up to room temperature, it tastes like Madeira wine.
A complex and mellow mouthfeel
The first thing you notice is the fresh, clear sweetness. When chilled, the acidity tightens for a refreshing drink. As the temperature rises, it is surrounded by refreshing acidity and rich umami, and has a rich flavor with a faint lingering finish. Whether your next dinner course is a delicate herbal dish or a hearty dish like cured meat with Madeira sauce, your taste buds won't be overwhelmed. And since it is designed to make it easier to feel the umami flavor, it boosts the blissful umami sensation, especially when eaten with meat.
In other words, it means adding and multiplying the umami of the sakes. Of course, the number is infinite. For example, it is possible to assemble the desired flavor of the dishes to be combined. In other words, dishes that would be difficult to pair with sake alone can be surprisingly matched through assemblage.
The number of cooperating sake breweries that sympathize with the cause is increasing, and a new era for sake has begun.
