The company started brewing and selling sake in Fushimi, Kyoto in 1744, and by the beginning of the Meiji era had become one of the top sake brewing companies in Fushimi in volume.
Its predecessor was Kawachi-ya, a rice wholesaler from Kawachi, Osaka. Kawachiya, a successful rice wholesaler in Kyobashi, acquired sake stock from the Shogunate in 1744 in Fushimi, Kyoto, and began brewing and selling sake. Although the Fushimi Magistrate's Office had to control the amount of sake produced, the company became one of the top sake brewing companies in Fushimi by the beginning of the Meiji period.
From the Meiji period to the Taisho period and World War II, Kawachiya brewed and sold Japanese sake, Keicho, using tax rice. After the war, the Heiwa Sake Brewery Limited Partnership Company was established in 23 after experiencing land reform and subsequent economic changes. The company specialized in selling tubs to other companies, but in XNUMX it restarted the Keicho brand. Keicho Fushimi Sake, a representative brand of Junmai Daiginjo sake, is made using Fushimi's famous water and Yamada Nishiki with a rice polishing rate of 35%, and is made with great care and time to create a mellow, sweet ginjo aroma and smooth throat.
