[Tsuji Honten] has a long history of producing ``Gozensake'', and has continued to brew sake with the characteristic dryness that has been sought after in the northern part of Okayama, where the winters are harsh since ancient times.
Tsujimoto branch produces the prestigious "Gozenzake", which originates from the fact that it was a gift sake for the Mimasaka Katsuyama clan. The brewery is located in Maniwa City in the northern part of Okayama Prefecture, and the brewery produces sake with the characteristic dryness that has been sought after in this region, which has experienced harsh winters since ancient times. We use all Omachi rice from Okayama Prefecture, and use underground water from the Asahi River that flows next to the brewery, pumped up from underground. The origin of sake brewing is to brew local ingredients using local techniques, and the brewery has a long history.
What makes it unique is that they are involved in making bodhi moto, which is rare even in Japan. In 1984, it was reprinted before the rest of the country by the previous brewer of Gozenshu. Also known as mizumoto, it is a technique that produces natural lactic acid bacteria, similar to kimoto-zukuri, and uses soyashi water that has been boiled with lactic acid bacteria as the brewing water before preparing the motomoto. Unlike the Kimoto type, which often has a strong flavor, it is characterized by a refreshing sourness derived from lactic acid bacteria. Through repeated trial and error on traditional manufacturing methods, they created a new method of making Bodaimoto that is suitable for sake breweries.
Currently, the person in charge of the brewery is Okayama Prefecture's first female brewer. We believe that the humanity of the brewer is reflected in the taste of the sake, and we continue to approach sake with sincerity in order to create even better products.
