Kitajima Sake Brewery
[Kitajima Sake Brewery] is located in Konan City, Shiga Prefecture, which is located southeast of Lake Biwa and has soft underground water flowing from the Suzuka Mountains. Currently led by the 14th generation, the brewery is brewing sake that values learning from the past and learning from the new.

The history of Kitajima Sake Brewery, which has a brewery on the mountainside near JR Kosai Station, begins in 1805 when it was appointed as a brewery director under the Yodo clan. Although the brewery was closed during the war, after the war they developed Miyo Sakae, which became their representative brand, and in the Heisei era, they won a gold medal at the National New Sake Awards.
Currently led by the 14th generation, the brewery is brewing sake that values learning from the past and learning from the new. The sake rice used is Omi rice, which is purchased from farmers the brewery trusts. In addition to Wataibune, Gyokuei, and Ginfubuki, he also makes one using edible rice called Mizukagami.
Along with "Miyosakae", you should also pay attention to the challenging brand "Kitajima". By working on the old-fashioned method of making kimoto, which uses naturally-derived bacteria to grow sake mash, they arrived at a completely fermented sake for drinking. Although it is strong, it melts into the body easily, and it shows even more power when warmed. If I had to compare its expressive power, it would have a unique hand-drawn feel, like drawing a circle freehand instead of with a compass. I want to enjoy the delicate flavors of living ingredients that are not displayed on the label.
