Takashima City is located in the northwestern part of Shiga Prefecture, where there is a lot of snow, and is blessed with the blessings of the Azumi River. One of the methods is the old-fashioned Yamahai preparation. Without adding yeast, we simply attract the natural yeast that lives in the brewery by controlling the temperature and wait for it to grow slowly. What is also noteworthy is that they use a technique called wooden tank Tenbin Shibori, which is rare even in Japan. This technique involves stacking mash bags in a boat-like wooden tank made of cherry wood, and then pressing out the sake by attaching a weight to a wooden balance rod. It takes three days to finish squeezing, and the amount obtained is about 3% of that obtained by mechanical squeezing. The sake that flows out from the nook under the wooden tank has a pure flavor with no unpleasant tastes.
We offer products that can be enjoyed in accordance with the four seasons, such as ``Furosen Sannen Aged'', which is popularly known as ``Red Label'', ``Umika'', which is made for hot sake, and a series of fresh sake that is crisp, rich, and full of umami. All of these are rare sakes produced in small quantities.
