"Hana Tomoe" is a representative brand that has been passed down from generation to generation at Miyoshino Jozo in Yoshino, Nara. "Natural selection DNA" evolved from that DNA.
We produce sake that is close to Yoshino's climate, impresses, and satisfies.
[Miyoshino Jozo] stands along the river in Yoshino, Nara Prefecture, which is known for its 1000 cherry blossoms.
In 2017, the sake was changed to completely yeast-free, and sake is now fermented naturally using the natural yeast that survived in a highly concentrated state. The idea and design of pairing (depending on the season) allows us to create easy-to-drink alcoholic beverages without adding yeast. ``Hana Tomoe'' is a sake that is close to Yoshino's climate, impresses, and makes sense. Hanahama's style is to create flavor by releasing the acid of fermentation without suppressing it.
"Natural selection" can be said to be the culmination of Miyoshino Brewing, which says, "To talk about this sake, we have to start with the history of Hanahomae."
This brand was created as a result of deepening our understanding of Yoshino's nature without going against it. Among them, "Natural Selection DNA" provides a glimpse of evolution within natural selection, which is occurring even at this very moment.
