Kamisugi Sake Brewery
In Anjo City, Aichi Prefecture, a grain region known as Japan's Denmark, they use locally developed wines such as ``Wakamizu'' and ``Yume Ginko'' to brew unique sake that can be enjoyed as an accompaniment.
Anjo City, Aichi Prefecture, is nicknamed "Japan's Denmark" after Denmark, an agriculturally advanced country. [Kamisugi Sake Brewery] is located in an area blessed with water sources and water quality that are essential for grain growth. They brew sake using soft water gushing from a well on the premises and locally produced rice.

Aiming for the ultimate local sake, they sealed Yamada Nishiki from Hyogo Prefecture, which they had been ordering up until then. They use ``Wakamizu'' from Anjo City and ``Yume Ginka'' from Aichi Prefecture to create unique local sake that can only be found in this area.

We also value being involved in rice cultivation, and our brewers work hand in hand with local farmers and participate in rice planting and harvesting. Furthermore, they are particular about 100% of their carefully harvested rice being polished in-house. After carefully polishing the rice while carefully determining the moisture content, the water used for preparation is adjusted to the optimum temperature and the rice is washed. The craftsmen put a lot of time and effort into every step of the process, honing their craftsmanship to create aged sake that goes perfectly with Nagoya food, and fruity ginjo sake. It continues to be loved by the local community for its sake brewing that is rooted in the local climate.
